If you can successfully bake a delicious vegan banana bread then you are winning at life. After all, regular banana bread has got to be the one bake that is in everyone's cake making repertoire – and we all love it – so it's only right that we cater for our or our vegan friend's needs with a completely vegan version.

Why? First of all it's delicious, and second of all, it's a great excuse to use up the undesirable brown bananas at the bottom of your fruit bowl. If you're not used to making vegan bakes then don't panic because it's a simple recipe and the results will be moist and flavorsome rather than dry and unappetizing!

How do you make banana bread without eggs?

We know that eggs aren't vegan, and we also know that eggs are quite useful in baking! So, how do we make this recipe work without eggs? It's the dates that will largely act as the substitute – they will in essence be like a binder. There are a couple of other vegan tricks to use such as flaxseed eggs, while banana is often used in some recipes also!

How to make vegan banana bread

Ingredients:

  • 5 bananas
  • 7 oz flour 
  • 2½ oz ground almonds 
  • 2 tsp baking powder 
  • 1½ oz coconut oil 
  • ¼ cup almond milk 
  • 3¼ oz pitted dates 
  • 2 oz chopped walnuts Salt Margarine (for greasing) 

Method:

1. Preheat oven to 180°C/350°F and grease a loaf pan.

2. Pour some boiling water over the dates and let them sit for approximately 10 minutes.

3. Mix flour, ground almonds, baking powder, and a pinch of salt until well combined. Peel and roughly mash most of the bananas with a fork. Drain the dates, add to a large bowl with coconut oil and almond milk, and blend with an immersion blender.

4. Now for the fun bit! Add the date mixture and mashed bananas to the bowl with the flour and mix to combine. Fold in the walnuts. Pour the mixture into greased loaf pan, cut the last banana in half lengthwise and place over the batter, cut-sides up. 

5. Transfer to the preheated oven and bake at 180°C/350°F for approximately 45 minutes, or until an inserted toothpick comes out clean.

The next step involves getting cosy and stuffing your face with this scrumptious desert – this part shouldn't be too tricky.

Top tip: toast yours a little and serve it with some vegan butter. Incredible.
