Jackfruit curry recipe: a vegan winter warmer

The jackfruit curry is so easy to make with tinned ingredients – and packs a punch on flavours

Every heard of jackfruit curry? This exotic fruit is fast becoming a go-to for a whole range of vegan recipes, thanks to its unusual texture and flavour? What does jackfruit taste like? A bit like an exotic fruit medley (think somewhere between pineapple, banana, and mango) when it's ripe, and very mild and neutral when unripe, hence the frequent use of unripe or young jackfruit in cooking. Add to that an intriguing stringy texture that's not unlike shredded meat, and you've got an excellent candidate for a curry or stew.

This recipe uses tinned jackfruit, which is much easier to find and work with than fresh jackfruit, although you can use fresh if it's readily available where you live.

Jackfruit curry recipe

Ingredients:

  • Canned jackfruit, one tin
  • One tin of chopped tomatoes
  • One red or yellow bell pepper
  • One brown onion
  • Garlic, two cloves
  • Red chilli, one
  • Fresh ginger, a thumbful
  • Coconut milk, a tin
  • Potatoes, 500g
  • Garam masala spice mix, a teaspoon
  • Cumin, a teaspoon
  • Turmeric, a teaspoon
  • Coriander/cilantro, a small bunch, to garnish

Method:

1. Chop the onion and add to a couple tablespoons' warmed rapeseed oil in a large pan. Cook until the onion softens, without colouring

2. Peel and finely chop the ginger, garlic cloves, and red chilli, and add to the garlic, Cook for five minutes, until the garlic becomes fragrant.

3. Add the spices and gently fry for a few more minutes.

4. Drain the jackfruit and peel and chop the potatoes and the pepper. Add to the onion and spice mix, gently stirring to get a nice coating on all sides. 

5. Add the chopped tomatoes and stir fry for another few minutes. 

6. Add the coconut milk. Bring to the boil, then reduce the heat to a simmer and cook for approximately 40 minutes, until the curry sauce consistency is achieved. 

7. Serve with steamed rice. 

Tip: You can use sweet potato instead of regular potato, but the result will be much sweeter.

Not convinced if you should give jackfruit a try? This dense fruit is packed with vitamins, which makes it an excellent immune system and skin booster – it's particularly rich in vitamins A and C. 

Jackfruit is also an unusual fruit in terms of its protein content – three times more than comparable fruits such as mango. It's also a fibre-rich food, which is important for regulating digestion and feeling full after a meal. Definitely one to try for a meat-free meal.
