A slow cooker turkey crown recipe is the answer to all your 'please, may it not turn out dry' prayers. While turkey is the Christmas dinner staple, it's also one of the trickiest meats to get right. Overcook it in the oven even just a little, and it goes really quite dry. Turkey is naturally lower in fat than chicken, which makes it more prone to dryness, but it also doesn't respond to butter as well as chicken, which means that overcompensating with lots of butter won't produce a better result.
Enter the slow cooker: cooking your turkey crown in a slow cooker is by far the most reliable method we know of to make turkey breasts that are juicy and tender. Turkey crown slow cooker recipe
For this very simple, juicy turkey crown recipe, you'll need:
- A white onion, quartered;
- A potato and a large carrot, roughly chopped;
- Rapeseed oil or olive oil, two to four tablespoons;
- Butter, a couple of teaspoons, melted;
- Seasoning mix of your choice;
1. Mix the oil with the seasoning mix and a couple of generous pinches of salt.
2. Rub the seasoned oil all over the turkey crown, really working it in. We advise against using butter, as the flavour won't be as good.
3. Line the bottom of the slow cooker's inner pot with the chopped onion, carrot, and potato.
4. Place the crown on top of the vegetables and cook on high for about five hours. Baste the crown with the cooking juices about every hour, to really lock in moisture.
5. For the last 10 minutes, cover the top of the turkey crown with the melted butter and place under the grill to crisp up the skin. If your slow cooker isn't grill safe, do this last step in a grill proof dish.
Serve with all the Christmas trimmings and use any remaining cooking juices to make a gravy. Simply stir on the hob with a couple of tablespoons of flour and a dash of brandy or red wine.
