Pea and ham soup: use basic ingredients to create a super tasty lunch

Pea and ham soup is pretty darn tasty and requires minimal ingredients – we're not kidding when we say that peas and ham are pretty much all you'll need. Flavoured with a little stock, some seasoning and an onion, this tasty dish is perfect for days when you're really short on supplies but want to make something that's healthy and hearty.

It may look quite peculiar – it's bright green, after all – and it may conjure up memories of Dr. Seuss's green eggs and ham (we've resisted the opportunity to rhyme nutritious with delicious on several occasions, already), but it's worth a go if a bag of frozen peas and some slices of ham are all you have to work with.

Pea and ham soup

Ingredients:

  • An onion
  • Peas – frozen, tinned or fresh would work, 500 grams
  • Ham, 300 grams
  • A potato
  • A knob of butter
  • A good glug of oil
  • 1 litre of stock – vegetable or pork would be great, but whatever you have to hand
  • Salt and pepper for seasoning

Method:

1. Begin by finely chopping your onion and dicing your peeled potato into small cubes.

2. Add oil and butter to a pan and wait until heated. Then, add the onion and potato to the pan, allow to soften for three to five minutes.

3. Add the stock to the pan and reduce to a light simmer. Once the potatoes have softened, add peas to the mix and allow to cook for a few more minutes.

4. Once all is softened, use a hand blender to blend until smooth. Then serve with finely sliced ham. Season with salt and pepper.
