Instant Pot owners, are you missing out on the classics? These favorite Instant Pot recipes are simplicity itself in a slow cooker (and you can make them in any slow cooker, too)

The Instant Pot is a best-seller, and we’re huge fans of these Instant Pot recipes. Taking this slow cooker option means home-cooked meals that are high on taste and low on effort. You can get on with the rest of your life while the cooker does its magic.

And while we wrote these recipes for an Instant Pot, they’re all classic dishes that you could cook in another slow cooker brand – or even conventionally (but why would you when you can turn to a one-pot, slow cook option). The results are delicious, and they deserve a place in your recipe collection.

1. Mac ’n’ cheese

No stirring is required to create the sauce with this recipe. You just need to pour boiling water over the pasta at the beginning, then turn things over to the Instant Pot.

Macaroni cheese

You will need:

  • 12oz macaroni 
  • 2 1/2 cups milk 
  • 2oz butter
  • 2oz cream cheese, cubed
  • 3 1/2oz cheddar, grated
  • 1oz parmesan, grated, plus extra to serve
  • Salt and freshly ground black pepper

Method:

1. Boil water and pour over the macaroni then drain.

2. Add macaroni, milk, butter and cheeses to the pot. Season and stir to combine thoroughly.

3. Cover and cook on low for one hour, then stir. Re-cover and cook for around 30 mins more, or until the macaroni is cooked and the sauce creamy.

4. Serve sprinkled with parmesan.

2. Easy beef stew

Lift the lid on a hearty stew of tender beef and vegetables. What could be better on a cold winter night? You could sub in other vegetables such as parsnips or rutabaga.

You will need

  • 2lb beef stew meat, diced into 1 inch cubes
  • 2 tbsp plain flour
  • Salt and freshly ground black pepper
  • 1 clove garlic, minced
  • Bay leaf
  • 1 tsp paprika
  • 1 tsp Worcestershire sauce
  • 1 onion, chopped
  • 3 medium potatoes, peeled and diced
  • 4 carrots, peeled and cut into rounds
  • 1 stick celery, sliced
  • 1 can (15oz) diced tomatoes
  • 1 1/2 cups beef broth
  • Fresh thyme, chopped, to garnish
  • Parsley, chopped, to garnish

Method:

1. Put the beef into the pot. In a small bowl, season the flour then add it to the pot and stir to coat the meat.

2. Add garlic, bay leaf, paprika, Worcestershire sauce, onion, potatoes, carrots, celery, tomatoes and beef broth and stir to combine well.

3. Cover and cook on high for four to six hours, or low for eight to 10 hours, or until the meat and vegetables are tender.

4. Sprinkle with parsley and thyme to serve.

3. Slow cooked chicken curry

This recipe uses chicken thighs, which will be full of flavor at the end of the long, slow cooking process. You could use chicken breasts instead, if you prefer them.

You will need:

  • 1 can (15oz) diced tomatoes
  • 3/4 cup chicken broth
  • 1 large onion, chopped
  • 1 tbsp ginger, finely chopped
  • 1 tbsp curry powder
  • 1/2 tsp salt
  • 1lb chicken thighs
  • 1lb potatoes, peeled and cubed
  • 2oz fresh cilantro (coriander), chopped

Method:

1. Put tomatoes, chicken broth, onion, ginger and curry powder and salt into the pot, and stir.

2. Add the chicken and the potatoes and stir to combine well. Cover and cook on high for two and a half to three hours, or low for five to six hours, or until the chicken and vegetables are tender.

3. Sprinkle with cilantro (coriander) to serve.
