How to cook noodles – three delicious and comforting recipes

Learning how to cook noodles couldn't be easier. This useful and nutritious food also tends to keep for quite a while, which is a bonus now that many of us are making sure we have enough food to keep us going if we're going to be self-isolating. Even better, noodles work well with other long-life ingredients such as miso soup sachets, frozen vegetables, and soy sauce – which also will keep ages in your cupboard.

1. How make noodles ramen style

Ingredients

Ramen is a Japanese noodles soup dish that literally takes a minute or so to prepare. All you need to enjoy a delicious ramen is:

  • A soup base, e.g. a  vegetable stock cube or a miso soup sachet
  • Fine egg noodles, two nests per person
  • Half a tin of water chestnuts
  • Protein of your choice, 150 grams (optional)
  • Spring onion, a bunch, finely chopped
  • Grated carrot/courgette
  • Sugar snap peas or mange tout, 80 grams
  • A boiled egg, halved

Method:

Simply combine all the ingredients except the egg in a saucepan of boiling water and simmer for five minutes – just make sure any protein you're adding it already cooked. Top off with the boiled egg when serving. This is an entirely customisable recipe, and you can add pretty much anything to it, from chillies to lemongrass and beansprouts. 

2. How to stir fry noodles

Stir-frying noodles really couldn't be easier: pre-boil them for a minute or two, drain, let cool. Then quickly fry them in a tablespoon of sesame oil and add soy sauce, a garlic clove, and a bit of ginger. Again, this work with almost any vegetable you liked – our favourites to have with stir-fried noodles are broccoli, sugar snap peas, and baby corn. 

3. How to cook Singapore noodles

Ingredients:

Spicy and fun to eat, Singapore noodles need:

  • Dried Singapore vermicelli noodles, 200 grams
  • Madras curry powder, two teaspoons
  • Chilli powder, a teaspoon
  • Vegetable oil, two tablespoons
  • A white onion, sliced
  • Salt, to taste

Method:

1. Boil the vermicelli noodles for three minutes. Drain and cool.

2. In a frying pan or wok, heat up the oil and add the onion and spices. Let the onion soften a little. Add the noodles and sauté for three to five minutes.

These noodles go very nicely with cooked king prawns or an egg.
