How to cook halloumi: grill it, fry it, or even make halloumi fries...

If you're craving this squeaky and delicious cheese then you'll want to know how to cook halloumi. A Cypriot speciality, halloumi cheese has certainly taken the UK by storm. The perfect meat-alternative to the vegetarians amongst us, halloumi works well in burgers, on kebabs, on barbecues, as part of a salad and more.

But how is it best prepared? Below, we'll teach your how to cook halloumi in a pan, how to grill halloumi and how to prepare halloumi fries, so you can prepare your favourite dishes from home.

How to cook halloumi 

To cook halloumi in a pan, you will need:

  • Sliced Halloumi, 2 or 3 slices per person
  • Olive oil

Method:

1.  Slice your halloumi into even slices. You want each slice to be thick enough that it doesn't fall apart, but not too thick that it doesn't cook through in a short period of time.

2. Brush each side of your halloumi with a light coating of olive oil.

3. Heat your pan to a medium heat, before adding your halloumi slices. Don't bother cooking one slice of halloumi at a time, put as much in the pan as you can.

4. Cook your halloumi for one to two minutes, or until the first side becomes golden brown. Then, flip and repeat on the opposite side. 

How to grill halloumi 

Ingredients:

  • Halloumi, 2 or 3 slices per person

Method:

1. Slice your halloumi into even slices. You want each slice to be thick enough that it doesn't fall apart, but not too thick that it doesn't cook through in a short period of time.

2. Place your halloumi on tin foil, under a medium grill.

3. Cook for three to five minutes on one side, or until golden brown. Then, flip and do the same on the other side.

Top tip: it's also possible to grill halloumi in a grilling machine. This will achieve grill marks – great for aesthetic appeal – and you won't have to worry about flipping you halloumi, as your grill will cook it on both sides.

Halloumi fries

Ingredients:

  • Halloumi, 1 block
  • Plain flour, 30 grams 
  • Paprika, 1-2 tsp
  • Pepper, for seasoning
  • Oil, for frying
  • Dip: we'd recommend combining natural yoghurt with fresh coriander, a dash of lemon and plenty of seasoning

Method:

1. Slice your halloumi into pieces that resemble chunky chips.

2. Combine flour, paprika and pepper in a shallow bowl. Then, dip each of your halloumi 'fries' in, one by one, ensuring that each is evenly coated.

3. Add two to three centimetres of oil to your pan. Remember, you're deep frying your halloumi, so you'll need to use plenty of oil.

4. Heat your oil to a medium temperature, before adding your halloumi slices – we'd recommend tackling a few at a time. The oil will likely spit, so you'll need to be careful.

5. Turn each piece of halloumi, intermittently, using a pair of tongues. Once your halloumi is golden brown, all over, remove from the pan and place on a plate with a piece of kitchen, which will soak up the excess oil.

Top tip: it's also possible to use a deep fat fryer, or an air fryer to prepare halloumi fries with minimal effort.

How to cook halloumi on a barbecue

Halloumi makes a great option for vegetarians during barbecue season. Cook on a skewer with peppers, tomatoes, red onion and courgette for tasty vegetable kebabs.

Ingredients:

  • Halloumi
  • Oiive oil
  • Lemon juice, a squeeze
  • Optional: serve on skewers with peppers, tomatoes, red onion and courgette for tasty vegetable kebabs

Method:

1. Slice your halloumi into even slices. You want each slice to be thick enough that it doesn't fall apart when you place it on a skewer, but not too thick.

2. Brush each side of your halloumi with a light coating of olive oil. Add a dash of lemon for a fresher flavour.

3. Place your halloumi on a skewer (with or without veg), as this will prevent it falling through the grills of your barbecue and onto the hot coals beneath.

4. Place your skewers on the barbecue, rotating for five to ten minutes, or until golden brown on each side.

How to cook halloumi like Nigella Lawson

So, how does Nigella Lawson cook halloumi, and what does she add for even more flavour? Here's everything you need to know:

1. Nigella Lawson starts by combining chili and olive oil in a separate bowl around 30 minutes before she begins cooking her halloumi. This allows the flavours to fully infuse and makes a great chili oil that's perfect for adding even more flavour to halloumi.

2. In terms of timings, Nigella Lawson only cooks her halloumi for around two minutes on either side. As long as the pan is hot enough, this is plenty of time to achieve the golden brown outside that we're all after.

3. Finally, Nigella Lawson adds a little lemon juice to her halloumi before serving for a little extra zing.
