Cheese scones recipe
Ingredients:
To make six cheese scones, you will need:
- Self-raising flour, 225 grams, plus a little extra for dusting.
- Cold butter, sliced into cubes, 50 grams
- Milk, 100ml, plus extra for brushing
- Cheddar cheese, grated, 125 grams
- Salt, a pinch
- Baking soda, one teaspoon
Method:
1. In a mixing bowl, combine the flour, baking soda, and salt, and add the butter. Lightly work in with your fingers to form scrumbs.
2. Add the cheese and gently mix it in; avoid overworking the mixture, as the butter will begin to melt.
3. Make a well in the middle of the mix and pour in the milk. Combine with your hands to form a dough.
4. Dust a work surface with a little flour, place the dough and roll out until about an inch thick. Using a biscuit or scone cutter, cut out as many circles as you can (you should get about five or six).
5. Preheat the oven to 200°C/Gas mark 6. Brush the scone circles with a little milk and sprinkle with additional cheese. Place the scones on a baking sheet and bake for 15-20 minutes until risen and golden.
