Want to know how to cook lamb chops? Easily the nicest cut, lamb chops make for a succulent – and flavoursome – meat main. There are all sorts of things you can add to lamb if you're oven roasting it, but we prefer to enjoy the lamb flavour without too many additions, and to grill or pan fry as it cooks so quickly.                   

The quality of the meat really matters here: we recommend the highest welfare meat (e.g. free range and organic) you can find.

How to cook lamb chops 

To cook enough lamb chops for four people, you just need four chops, a bit of salt, and a good-quality frying pan or grill pan. 

Method:

1. Take the lamb chops out of any packaging and pat them dry with a paper towel. Let them reach room temperature.

2. Season the chops and either fry or grill for 4-5 minutes on each side for medium rare, or 6-7 minutes for medium. Don't use any oil, as the fat in the chops will be enough to cook them without burning.

3. Rest the chops for at least five minutes before serving. This will help retain the moisture in the meat and prevent bleeding. 

Tip: For even more flavour, add a garlic clove and a sprig of fresh thyme at the frying/grilling stage.
