Have you made meatloaf? It’s one of America’s favourite foods, and we’re fans of this hearty dinner staple. But like many a popular dish, there are plenty of variations that have been adopted since its first appearance in a cookbook.
We’re big on experimenting with different recipes, and we reckon we’ve tried a fair few when it comes to making meatloaf. Our vote goes to this one, though – and it’s actually a pretty classic take on the dish.

Making meatloaf? You will need:
- 250g minced beef
- Half a small onion, finely chopped
- Half a stick of celery, finely chopped
- 1 egg, beaten
- 30g breadcrumbs
- 1/2 tsp mixed herbs
- 75ml milk
- Salt and freshly ground black pepper
1. Preheat the oven to 200ºC/400ºF/GM6.
2. Place all the ingredients in a large mixing bowl and combine. Form into a loaf shape and place on a baking tray lined with tin foil. Put into the oven and bake for 40 minutes. Serve sliced.
Tip: Mashed potatoes and peas are easy to prepare and tasty accompaniments to this meatloaf.
5 top tips to make your meatloaf tasty
1. Meatloaf is often served with sauce as the loaf itself isn’t moist. Jamie Oliver makes a tomato sauce to accompany his meatloaf, using onion, garlic, chilli and paprika plus chickpeas, Worcestershire sauce, tinned tomatoes and balsamic vinegar. Delicious, and it makes the dish even heartier, comfort food fans.
2. Delia Smith recommends making meatloaf using a food processor for thorough blending. The ingredients that go into the processor include mustard powder, Worcestershire sauce and dry white wine plus plenty of salt and pepper for flavoursome results.
3. When Gordon Ramsay visited Momma Cherri’s Soul Food Shack in his series Kitchen Nightmares, he loved her version of meatloaf, and couldn’t improve on it. If you want to maximise flavour and get the kids eating veggies without complaining about bits in their food, it’s worth following Momma Cherri’s lead and blitzing the red and green peppers, onions, celery and garlic she uses in meatloaf to get them in there stealthily.
4. One of our favourite cooks, Nigel Slater, includes porcini mushrooms and bacon in his meatloaf for scrumptious results. His meatloaf is moister than other versions, and crumbles rather than slices as a result. Try it if your usual preference is meatloaf plus sauce. It could win you over.
