Want to make yummy sausage rolls for brunch? Learn how to make sausage rolls yourself and enjoy this British classic at home. In fact, once you've tried homemade sausage rolls, you may never choose to have shop bought ones again, they're that good fresh out of the oven. 

Bear in mind that this recipe uses pre-made puff pastry, although if you're a keen baker, you are welcome to try to make it yourself.

How to make sausage rolls


For a batch of delicious homemade sausage rolls enough for four, you'll need:

  • Free range pork sausages, six
  • Olive oil, two tablespoons
  • An onion, finely chopped
  • Worcestershire sauce, a tablespoon
  • Fresh thyme, sage, or rosemary, a sprig
  • Salt and pepper, to taste
  • Puff pastry, 250 grams
  • One free range egg, beaten


1. Pop the casing of your sausages open and take out the sausage meat. Transfer into a mixing bowl.

2. Heat the olive oil in a frying pan and gently fry the onion until it begins to caramelise. You can add mushroom, apple, or any other additional filling you'll be using at this stage. 

3. Mix the sausage meat with the cooked onion, finely chopped herbs, seasoning, and Worcestershire sauce.

4. Roll out the puff pastry into a sheet about of roughly a pound-coin thickness. Cut lengthways into long rectangles. 

5. Distribute the sausage meat mixture evenly along the centre of the rectangles. Brush one end of the pastry with the egg and seal. 

6. Cut the long roll into smaller rolls, brush with the rest of the egg on top and bake for 25 to 30 minutes at 200°C/180ºC fan oven/gas mark 6. Serve while still warm.
