Pumpkin fries are a great way to make use of seasonal produce and this oven baked version has many health benefits over your regular chips. Pumpkins are high in vitamin A, so great for your vision and immune system so you can feel a little less guilty serving a big portion of these to the family.
Pumpkin fries take barely any prep and are easy to cook in the oven, too – just put them on a baking tray and turn half way. Dish them up as a side to your favourite main, or enjoy them as a hearty snack with the tasty paprika and garlic dip. We think they would be great served as part of a Halloween feast.

Pumpkin fries recipe
Prep time: 15 minutes
Cooking time: 25 minutes
- 1 pumpkin, peeled and deseeded, approx. 800g Pumpkin flesh
- 2 tsp cornflour
- 1 tsp curry powder
- sea salt, to serve
For the dip:
- 75g Greek yogurt
- 100g mayonnaise
- 1 heaped tsp paprika
- 2 cloves garlic
1. Pre-heat the oven to 220ºC/425ºF/Gas Mark 7.
2. Cut your peeled pumpkin into thin chips. Put in a bowl of cold water and soak for an hour. This removes some of the starch.
3. While the chips soak, make the dip. Peel and crush/mince the garlic. Mix with the yoghurt, mayo and paprika to make a thick sauce.
4. Drain the pumpkin and dry with kitchen towel or a clean tea towel.
5. Mix the cornflour and curry powder and dust the chips, coating them well with the powder.
6. Spread the chips on baking trays, then bake in the oven for 20–25 minutes. Turn once halfway through the cooking time. Cook until lightly browned. Sprinkle with sea salt and serve with the dip.
