Cornflake cakes: these Easter nest cakes are a weekend essential

Cornflake cakes are an easy way to create Easter nest cakes. Perfect to make with kids – top with mini eggs for an extra sweet touch

Cornflake cakes – and in particular chocolate cornflake cakes – have become something of an essential in the lead up Easter. These Easter nest cakes are super easy to make with kids, they require minimal ingredients and look just like sweet little birds nests when topped with mini eggs. And, if you're feeling extra Eastery, those little fluffy chicks that make an appearance every year. Awwwww.

But, don't just limit your cornflake cakes for the period before Easter, they're also a great option for using up Easter eggs (if you haven't eaten them already) in the weeks after the spring holiday. We've teamed up with The National Trust to bring you a super simple chocolate cornflake cake recipe.

Chocolate cornflake cakes

Ingredients:

  • Chocolate, 225 grams
  • Golden syrup, 50 grams
  • Butter or margarine, 50 grams
  • Cornflakes, 125 grams
  • Chocolate mini eggs, for decorating

Method:

1. Line 12-hole muffin/cupcake tin with paper cases. 

2. Melt the chocolate, golden syrup and butter in a bowl over a pan of simmering water or in the microwave.

3. Stir the chocolate into the cornflakes and divide into the paper cases.

4. Push 3 mini eggs into the nests and leave to set in the fridge for around an hour, or until firm.

5. Decorate with chocolate mini eggs.
