We all know the struggles of craving a waffle but not having the equipment to make one at will... well, problem solved because these griddle pan waffles taste just as good, but you don't need a waffle iron to make them.
This recipe isn't too complicated – you only need six ingredients and the toppings of your choice – from fruit to maple syrup (we're not judging). That's enough waffle out of us, here's how we make this yummy dish.

Griddle pan waffles

- 230g/1 cup self-raising flour
- 2½ tsp baking powder
- Pinch of salt
- 2 large eggs
- 350ml/1½ cups semi-skimmed milk
- 90g/3/8 cups unsalted butter, melted and cooled slightly, plus extra for greasing
1. In a large bowl combine the baking powder, flour and salt. In a large jug whisk the eggs, milk and melted butter together. Make a well in the middle of the dry ingredients and add in the wet ingredients, continuing to whisk the ingredients together.
2. Grease a griddle pan and put it over a medium heat. When the butter has melted, pour half of the batter to cover the base of the pan. Cook for five minutes or until it is light and a golden color. Try to lift the waffle with a spatula, you should be able to see clear griddle lines showing on the underside.
3. Flip the waffle (we suggest doing this by sliding the waffle out onto a large, tray or plate, place the pan over the top and invert it to flip the waffle back into the pan with the cooked side on top). Cook for five minutes on this side. Keep the cooked waffles warm while repeating with the remaining batter.
4. Cut the waffles into four and serve up and enjoy!
