What's that you just said, pancake cereal? Oh yes, and it's taking the Internet by storm. Just to be clear: it's not actually cereal, and it's not a 'healthy' breakfast; but, oh my, it's tasty and fun. Add yoghurt, whipped cream, fruit, maple syrup...have we tempted you yet?
- 100g plain flour
- 1/2 tbsp baking powder
- 1 tbsp sugar
- 100ml milk
- 25g mayonnaise – a great substitute if you only need ½ an egg
- 1 tbsp butter, melted
- Vegetable oil for cooking
- Yoghurt, maple syrup, raspberries and flaked almonds to serve
1. Sieve the flour and baking powder into a mixing bowl then stir in the salt and sugar.
2. Add the wet ingredients and beat together until you have a smooth pancake batter.
3. Pour your batter into a piping bag and snip the end off so you have a roughly 1/2cm hole.
4. Heat a frying pan over a medium heat with a knob of butter and a drizzle of vegetable oil (let it get nice and hot!)
5. Once hot, squeeze little dots of pancake batter over your pan, and cook on the first side until lots of little bubbles appear on the surface (about 1 minute), then flip and cook for a minute on the other side, until golden brown.
6. Serve them over yoghurt with berries, flaked almonds and a generous drizzle of maple syrup.
Oil vs. butter: which is better for cooking your pancakes?
As you've noticed, the above recipe very cleverly uses both butter and oil for frying the pancakes, but which is technically better, and does it make a difference to the taste?
Generally speaking, butter gives you the best flavour, but oil produces the most consistent result and is best for beginners. If you're making pancakes with butter, you'll need to top up frequently with a fresh wedge and watch that you butter doesn't burn in the pan, so you'll need to be nifty with your pancake flipping.
Oil won't require as much topping up and is better at maintaining a constant temperature without burning; vegetable oil is typically used because it has very little flavour of its own and won't interfere with the pancakes. You can use sunflower oil for a bit more flavour, though – you pancakes will be heavier, but also a bit tastier.
