You have to try these sourdough pancakes if – like us – you've jumped on the sourdough bandwagon this lockdown season and don't know what to do with your leftover sourdough starter.
After all, as much as we all love sourdough, there are only so many loaves anyone can make in one week. And these sourdough pancakes offer a great alternative that helps you reduce food waste in the process – we can't bear to throw all that discard in the bin. Discover how to make them below.

How to make sourdough pancakes
To make fluffy sourdough pancakes you will need:
- Plain flour, 200 grams
- Sugar, two tablespoons
- Baking powder, two teaspoons
- Sea salt
- Sourdough starter, 250 grams
- Two large eggs
- Milk, 240 millilitres
Method:
1. Combine all of the dry ingredients, followed by the wet ingredients and whisk vigorously until you achieve a smooth batter.
2. Take a frying pan, or skillet, and heat with a small amount of butter.
3. Once the pan is really hot, add a small amount of batter and cook for a minute or two on a low heat. Once the pancake looks to have cooked – you should see bubbles appear – flip and cook for a further minute or so.
Top tip: it's not uncommon for your first pancake to be the worst, so don't be too disheartened if it doesn't turn out quite as you'd planned.
4. Place on a plate and repeat the process with the rest of your batter. Serve with your choice of toppings.
What to add to your sourdough pancakes
There are a whole host of options that will make your sourdough pancakes extra delicious – depending on your preferences. Some of our favourite ideas include:
- Nutella and banana
- Maple syrup and fresh fruit
- Cooked rhubarb and pumpkin seeds
- Ice cream and banana
How to make savoury sourdough pancakes
These pancakes can also be savoury. Simply omit the sugar from the recipe above and then add a choice of savoury fillings and toppings. Their texture is somewhere between an American pancake and a crumpet and we have been making dozens since we started making sourdough.
Give these combos a go:
- Cheese and onion sourdough pancakes: add 80g of grated cheddar and either three chopped and fried spring onions, or half a diced and fried red onion to the mix before frying.
- Sweetcorn and chilli: just add 100g of cooked sweetcorn and a teaspoon of chilli flakes to the mix. Serve with avocado.
- Bacon bits: cook and crumble some crispy bacon into your mix before frying.
How to make sourdough pancakes like Jamie Oliver
It really doesn’t take long to make up a batch of scrummy pancakes. Here’s what you need to do to follow in Jamie’s footsteps.
1. Jamie uses 200g of sourdough starter. He puts it into a mixing bowl, then cracks two large free-range eggs into the bowl, too.
2. Next he adds in 100ml of whole milk, and whisks the lot with a balloon whisk to combine.
3. Jamie then adds 100g self-raising flour to the bowl (no need to sieve), plus a sprinkling of sea salt, and whisks until the mixture is thoroughly combined into a batter.
4. Now you’re ready to get cooking. Jamie puts a non-stick frying pan on to the hob, and heats, then adds a little oil, moving it round to cover the pan. He then adds a ladleful of the mixture per pancake.
5. Jamie gives each pancake one to two minutes each side until they’re golden brown
